Description

  • 1 lb beef stew meat, cut into bite-sized pieces
  • 1 tbsp olive oil
  • 1 onion, diced
  • 2 carrots, diced
  • 2 celery stalks, chopped
  • 3 garlic cloves, minced
  • 6 cups beef broth
  • 1 cup pearl barley
  • 1 can (14 oz) diced tomatoes
  • 1 tsp dried thyme
  • 1 bay leaf
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

1. Heat olive oil in a large pot over medium heat. Add beef and sear until browned on all sides. Remove and set aside.

2. In the same pot, sauté onion, carrots, and celery until softened, about 5 minutes. Stir in garlic and cook for another minute.

3. Add the beef back to the pot along with beef broth, barley, diced tomatoes, thyme, bay leaf, salt, and pepper.

4. Bring to a boil, then reduce heat to low and simmer, covered, for 45-60 minutes, stirring occasionally, until barley is tender and the beef is cooked through.

5. Remove the bay leaf, adjust seasoning as needed, and garnish with fresh parsley before serving.
