Instructions

1 Heat olive oil in a large pot over medium heat. Add onion, garlic, carrots, and celery. Sauté until vegetables are soft and fragrant.

2 Stir in chicken broth, cooked chicken, thyme, and parsley. Bring to a gentle boil, then reduce heat to a simmer.

3 Add the gnocchi and cook for about 3–4 minutes or until they float to the top.

4 Stir in heavy cream and spinach. Let it simmer for another 5 minutes, stirring occasionally, until the spinach is wilted and the soup is creamy.
