Description

  • 1 tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp salt
  • ½ cup unsalted butter, softened
  • ¾ cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • ¼ cup honey
  • ½ cup buttermilk
  • 1 cup fresh peaches, diced
  • 8 oz cream cheese, softened
  • ½ cup powdered sugar
  • 1 tsp vanilla extract (for frosting)

Instructions

1. Preheat your oven to 350°F (175°C) and line a cupcake pan with liners.

2. In a bowl, whisk together flour, baking powder, baking soda, and salt.

3. In another bowl, cream butter and sugar until light and fluffy. Add eggs one at a time, mixing well, followed by vanilla extract and honey.

4. Gradually add dry ingredients, alternating with buttermilk, beginning and ending with dry ingredients. Mix until just combined.

5. Gently fold in diced peaches, ensuring they are evenly distributed.

6. Spoon batter into cupcake liners, filling each ¾ full. Bake for 18–20 minutes or until a toothpick inserted in the center comes out clean. Let cool completely.

7. For the frosting, beat cream cheese, powdered sugar, and vanilla extract until smooth and creamy.

8. Pipe or spread the frosting over the cooled cupcakes and garnish with a peach slice or a drizzle of honey.
